Christmas Cake
Everyone loves the holidays with family and friends or that special someone. Here's a great treat to enjoy.
4 cups Flour | 1/2 lb chopped glazed pineapple | |
1 tsp. baking powder | 1 lb deluxe holiday fruit mix | |
1/2 tsp. baking soda | 1 lb mix glazed green & red cherries | |
1 tsp. salt | 1 lb currants | |
2 tsp. cinnamon | 1/2 lb pecan halves | |
3/4 tsp. mace | 1 can mandolin oranges | |
1/2 tsp. nutmeg | 1 lb butter | |
1 lb chopped nuts | 1 lb brown sugar | |
1 lb black raisins | 9 eggs | |
1 lb yellow raisins | 1/3 cup current jelly |
Sift flour, baking powder, soda, salt and spices together. Use part to coat fruit and nuts.Cream butter and gradually add brown sugar. Add well beaten eggs, combine the two mixes very carefully. Mix in dry ingredients, then floured fruit and nuts. Lastly add current jelly.This recipe will make 4 deep 6 inch square cakes. Time required for this size is 2 hours @ 275 degrees. Larger cakes will take up to 3 1/2 hours depending on size of pan. Line pans with greased heavy paper. Cool thoroughly before wrapping in saran or foil and storing in tightly covered tin box in cool place.
Almond Paste
(makes 1 cup)1/4 cup water1/4 cup sugar1/4 cup confectioners sugar1/2 tsp. lemon juice3/4 cup blanched almonds (4 ounces)Put all ingredients into a blender. Cover and blend on high speed for about 3 minutes, or until mixture is blended to a paste consistency.
